  7. Le ponemos a la olla la válvula y el fuego al maximo hasta que empiece la válvula a girar.
  8. Una vez la válvula empiece a girar y a soltar vapor, bajaremos el fuego al mínimo y dejaremos que hierva durante 1 hora.
  9. Cuando haya pasado la hora, apagamos el fuego y dejamos reposar unos 15 minutos hasta que la válvula no suene y a continuación abriremos la tapa.
  10. Comprobaremos de sal y si necesita se la añadimos, después colaremos el caldo con un colador fino separando las verduras, la carne y los huesos del caldo (el morcillo lo podéis utilizar para otras elaboraciones como croquetas) y ya tenemos nuestro caldo.
