- Desglasá con vino blanco o similar. Yo usé el culito de un champagne abierto que tenía en la heladera y que no servía para nada. Evapora el alcohol y.....
- Agregá el arroz en forma de lluvia. Mezcla con cuchara de madera haciendo que tome temperatura e, incluso, se vaya tostando también el grano. En todo esto, se va impregnando de sabor.
- Cuando el arroz haya tomado temperatura, se haya empezado a dorar y veas que la cacerola pode a gritos algo de líquido, cubrí todo con caldo de verduras hirviendo y baja la temperatura de la olla!!! Mezclá bastante así el líquido entra uniformemente en todos lados.
- Déjalo cocinar por 20' aprox, a fuego mínimo, revolviendo para ayudar a desintegrar la calabaza y así tenga cremosidad.
- Incorporá curry, comino, coriandro, ralladura de limón y nuez moscada
- Al servir, pimienta negra molida, cristales de sal gruesa por arriba y aceite de oliva.
